  1. Begin by placing your corn flour (Maseca) into a bowl and mixing it with the water using your hands or a mixer.

  2. Add the salt and butter and continue mixing until the butter is fully incorporated.

  3. Divide the dough into equal portions and roll into balls.

  4. Begin preheating your frying oil in a medium pot.

  5. Place the balls unto a flatly laid plastic wrap square so it doesn’t stick to your surface, using a tortilla press or your hands flatten the dough into a ¼ inch disk.

  6. Place a tablespoon of shredded cheese and another tablespoon of tinga in the middle of the disk and fold it over to form a half moon pouch. Repeat this process until you have your desired amount of quesadillas.

  7. Fry until golden, then place on papertowels to absorb the excess oil.

  8. Top them with your lettuce, crema, queso, and salsa.
