  1. Start by making the curtido. Slice the purple onion thinly, grate your carrots, and place in a glass

    container with the remaining curtido ingredients. 

  2. Refrigerate the mixture for at least 30 minutes before serving.

  3. While the curtido is being refrigerated, fry your tortillas in shallow oil until crispy to make your tostadas.

  4. Pour out your refried beans and mix them till smooth and set to the side.

  5. Heat Mestizo’s cochinita in a pan with a splash of olive oil. 

  6. Assemble your tostadas starting with a layer of beans, place your meat, and your homemade curtido on top.
