  1. Defrost your kit (instructions on the ready meals recipe main page)

  2. Begin by placing your corn flour (Maseca) into a bowl and mixing it with the water using your hands or a mixer.

  3. Add the salt and butter and continue mixing until the butter is fully incorporated.

  4. Divide the dough into equal portions and roll into balls.

  5. Using your hands flatten the dough balls into ½ inch disks then pinch the sides to create light walls to hold your toppings better.

  6. Prep your toppings: shred your lettuce, crumble your feta cheese, mix your sour cream.

  7. Place your now shaped sopes on a flattop grill or a frying pan with a generous layer of oil. Cook for about 15-20 minutes or until crispy and golden. Keep in a cloth tortillera, or a towel so they maintain their moisture otherwise they’ll dry out.

  8. Heat up Mestizo’s Carnitas in a frying pan with a splash of oil for about 5-8 minutes.

  9. Spread a layer of refried beans, add your desired amount of carnitas, shredded lettuce, and the rest of the toppings.
